Six-taste Roasted Squash + Sweet Potatoes

Sweet, salty, sour, bitter, pungent, and astringent - the six tastes of Āyurveda help us to feel satiated and nourished, they help to pacify dosha as needed and they help to prevent cravings. This simple and delicious recipe makes a great addition to your holiday table or enjoy it anytime you like during Vata season.
Ingredients
3 cups butternut squash, diced
3 cups sweet potatoes, diced
2 TBS coconut oil, melted (or olive oil)
½ tsp cinnamon
¼ tsp turmeric
¼ tsp black pepper
⅛ tsp nutmeg
¼ tsp cardamom
1 tsp Himalayan pink salt
1 tsp lime juice
raw local honey (drizzle)

Method
Preheat oven to 350º.
In a medium bowl toss the diced vegetables with the melted oil.
Add the spices and salt. Toss to coat.
Spread the mixture evenly (in one layer) on a baking sheet and bake for 30 minutes (or until tender), stirring halfway through.
Remove from the oven and allow to cool for a few minutes. Drizzle with honey and lime juice. Enjoy!
