A delicious sweet treat that’s good for building bone tissue, red blood and ojas. They are a little sweet, but great for postpartum moms, those looking to build or rejuvenate, and as a celebratory treat.
Ingredients
1 cup evaporated cane juice, or jaggery
2/3 cup water
1 tsp cardamom
1 tsp ginger (optional)
2 cups almond flour (blanched with skins removed)
2 tbsp ghee
2-3 tbsp slivered almonds

Method
Line an 8 x 8 glass dish with an extra-large piece of parchment paper, folded and pressed into the corners.
In a wide, heavy-bottomed saucepan, combine the sugar and water. Bring to a boil over high heat, stirring to dissolve. Reduce the heat to medium and boil for 10 minutes, stirring constantly.
Add cardamom and ginger (if using); stir.
Add almond flour to the boiling mixture and mix quickly.
Keep stirring in a circular motion; the mixture will become thick. Soon the almond flour will absorb the liquid and become a paste.
Continue to cook, folding the mixture occasionally and letting it burn. Collect ay pieces off the sides. After 6 or 7 minutes, the mixture will ball up.
Reduce the heat to low. Add the ghee and mix well, scraping the bottom of the pan.
Remove from the heat and transfer the ball to the paper-lined dish.
When cool enough to touch but still warm and pliable, use your hands to press it into the dish.
Sprinkle the top with almond pieces. Press them into the fudge by folding parchment paper over and smoothing the top of the mixture.
Cool completely before cutting. Lift the parchment paper out of the pan and onto a cutting board. Slice the bars into diamonds.
Store in an airtight container with parchment paper between layers on the counter for up to one week.
