This gently spiced breakfast quinoa is a delicious way to begin your morning with grounding energy and sustained nourishment. Made with protein-rich quinoa, juicy blueberries, and a touch of maple sweetness, this bowl is both comforting and balancing—perfect for all seasons.
Ingredients
2 cups unsweetened non-dairy milk, plus more for serving
1 cup quinoa, rinsed
2 tbsp maple syrup or jaggery
¼ tsp sweet spice, plus more for serving (or cinnamon)
1 cup (½ pint) fresh blueberries

Method
In a small saucepan, bring non-dairy milk to a boil. Add quinoa and return to a boil. Reduce heat to low and simmer, covered, until three-quarters of the milk has been absorbed, about 15 minutes.
Stir in maple syrup and sweet spice. Cover and cook until almost all the milk has been absorbed, about 8 minutes.
Stir in blueberries and cook for 2 minutes more. Serve topped with additional non-dairy milk, sweet spice, and maple syrup.
