spring hike energy bites

These energy bites are perfect for a springtime hike, to throw in the kid’s lunch, to pack on a road trip, or just to enjoy with a cup of afternoon chai. They are flavorful, chewy, crunchy, and not too sweet.
Ingredients
1 cup popped amaranth (see note)
½ cup slivered almonds, chopped
8 dried apricots, diced
8 dried dates, diced
¼ cup raw honey
1 tsp sweet spice (or cinnamon)
¼ cup rolled oats
2 TBS sunflower butter
2 pinches of himalayan mineral salt

Process
Coarsely chop the dates, apricots, and almonds.
In a large mixing bowl combine the popped amaranth, rolled oats, almonds, sweet spice, and salt. Mix well.
Next, add the chopped fruit stirring to coat the fruit (it will be sticky) with the dry ingredients.
Drizzle the honey evenly over the mixture. Add the sunflower butter and mix well.
Using a 1 TBS cookie scoop, divide the mixture and roll it into uniform balls. Store at room temperature in an airtight container for up to one week.
NOTE: You can get popped amaranth at Whole Foods, some health food stores, or even online. You can also pop it yourself, however I have found that it's much easier to buy it already popped.
