red lentil + sweet potato dal

 

serves 4  | ready in 40 mins.

Sweet, nourishing, and oh so yummy! This dal is the perfect combination of sweet and savory and is a wonderful recipe for pacifying Vata. Once you try it, I am certain it will become a seasonal staple.

Ingredients

2 TBSP of ghee or sesame oil
1 clove garlic (or ½ tsp hing)
1 tsp fresh minced ginger
½ cup of sweet onion, diced
½ tsp turmeric powder
1 tsp cumin powder
1 tsp ground coriander 
1 ½ tsp garam masala
¼ tsp cinnamon
1 tsp Himalayan mineral salt
1 sweet potatoes, peeled and cubed
⅓ cup raisins
1 cup red lentils
2.5 cups vegetable stock
2-3 cups of dark leafy greens
¼ cup fresh cilantro, chopped 
1 TBSP lime juice

Method

  • Melt the ghee in a large saucepan over medium heat. Sauté the onion and garlic (or hing) for a few minutes, until the onion is translucent.

  • Add the fresh ginger and the dried spices. Sauté for another minute then add the sweet potatoes and raisins. Mix well ensuring that everything is coated in the ghee and spices.

  • Add the red lentils and mix well, also making sure they are well coated in the spices ghee. Add the stock and bring to a boil.

  • Reduce heat, cover and simmer for 25 minutes, stirring occasionally until the lentils have broken up and the potatoes are soft.

  • When there are 10 minutes left of cook time, add the raisins.

  • Remove from the heat. Whisk the dal to break apart the lentils and the potatoes. Add the leafy green, allowing them to wilt with the id on for 5 mins.

  • Taste for seasoning. Add the fresh cilantro and lime juice.
