This savory Ayurvedic Spiced Rice is simple and delicious addition to you favorite dal or curry recipe. It comes together in just 20 minutes and is a great way to level up your meals.
Ingredients
1 ½ cups basmati rice
2 TBS ghee or coconut oil
1 cinnamon stick
2 green cardamom pods
2 whole cloves
1 TBS cumin seeds
1 small onion, thinly sliced
2 ½ cups water
1 tsp Himalayan mineral salt

Process
Wash the rice well, strain, and set aside.
Heat the ghee in a large pot or sauce pan over medium heat. Add the cinnamon stick, cardamom pods, and cloves. Then stir in cumin seeds. Cook until lightly toasted and fragrant, about 1 minute.
Add the onion to the pot and sauté until golden brown, about 10 minutes.
Add the strained rice to the pot. Stir to coat with the ghee and spices and allow to toast slightly, about 3 minutes.
Add water and salt and bring to a boil. Cover and reduce heat to low. Simmer for 15 minutes or until the water has been absorbed. Let stand for five minutes then fluff with a fork.
Serve with your favorite dal.
