This savory Ayurvedic Spiced Rice is simple and delicious addition to you favorite dal or curry recipe. It comes together in just 20 minutes and is a great way to level up your meals.

Ingredients

1 ½ cups basmati rice
2 TBS ghee or coconut oil
1 cinnamon stick
2 green cardamom pods
2 whole cloves
1 TBS cumin seeds
1 small onion, thinly sliced
2 ½ cups water
1 tsp Himalayan mineral salt

Process

  • Wash the rice well, strain, and set aside.

  • Heat the ghee in a large pot or sauce pan over medium heat. Add the cinnamon stick, cardamom pods, and cloves. Then stir in cumin seeds. Cook until lightly toasted and fragrant, about 1 minute.

  • Add the onion to the pot and sauté until golden brown, about 10 minutes.

  • Add the strained rice to the pot. Stir to coat with the ghee and spices and allow to toast slightly, about 3 minutes.

  • Add water and salt and bring to a boil. Cover and reduce heat to low. Simmer for 15 minutes or until the water has been absorbed. Let stand for five minutes then fluff with a fork.

  • Serve with your favorite dal.
