We LOVE our dark leafy greens at the Ayurvedic Wellness Center. For that reason, we are constantly developing new delicious ways to enjoy them. This quick and simple variation goes great with our Creamy Miso Tahini Dal or your favorite dal of choice.
Ingredients
1 lb. (2 bunches) of dark leafy greens (lacinato kale works great here)
1 TBS tamari or soy sauce
1 TBS water
½ TBS rice vinegar
1 tsp mirin, or ½ tsp honey
¼ tsp toasted sesame oil
1 garlic clove, minced (or ¼ tsp hing)
¼ tsp red pepper flakes (or Three Pungents)
2 tsp olive oil, plus more as needed
Sesame seeds, for sprinkling (optional)

Method
In a small bowl, mix the tamari, water, rice vinegar, mirin, sesame oil, garlic (or hing), and red pepper flakes (or three pungents).
Heat the olive oil in a large skillet over medium-high heat. Add the greens and sauté for a few minutes until they begin to wilt. Cover and allow to steam for 1-2 mins.
Add the sauce to the pan and toss until well distributed. Cover and cook for 1 to 2 more minutes, or until the kale is tender.
Sprinkle with sesame seeds, if using.
