adaptable ayurvedic fruit cobbler

As someone who likes to eat healthy, but also has a sweet tooth, this recipe quickly became a favorite in my book. Its quick and easy to throw together for company, or to take to a pot luck, AND you can make it with whatever seasonal fruit you have on hand.
Ingredients
5 cups of seasonal fruit*
¾ cup rolled oats
¾ cup almond flour
¼ cup shredded coconut
1 tsp ground ginger
¼ tsp Himalayan mineral salt
3 TBS maple syrup
3 TBS coconut oil, melted

Method
Preheat the oven to 350º. Grease an 8-inch square baking dish with coconut oil. Place the blueberries and peaches in the greased baking dish.
In a mixing bowl, use a fork to combine the almond flour, oats, coconut, and ginger, breaking up any clumps as you go. Add the maple syrup and coconut oil and mix until just combined.
Crumble the almond and oat mixture evenly over the fruit.
Bake for 35-45 minutes, or until the fruit is bubbly and the topping begins to brown. Serve warm.
* Try peaches + blueberries, apples + pears, mixed berries, just apples - whatever is seasonal and you have on hand.
