sweet spice pancakes
Our favorite pancakes! A traditional breakfast with an Āyurvedic digestive twist.
Simple and quick to make, these flapjacks make a great weekend breakfast when you’re craving something more cozy. We also like to make some extra for weekday breakfasts.
These pancakes land light in your belly, and the sweet spice keeps them digesting well and delicious.
Ingredients
1 cup pancake mix of choice (we like Pamela's Baking & Pancake Mix, gluten free!)
1 large egg
3/4 - 1 cup oat milk or water
1 TBS ghee, olive oil, sesame oil, or coconut oil
1-2 tsp sweet spice
1/2 tsp of vanilla extract
optional blueberries or other fruit!
Method
Preheat griddle over medium heat. Oil lightly with ghee or coconut oil.
Mix all ingredients together until batter is smooth. It should be runny, but not too thin.
Add more water or mix as needed to achieve right consistency.
Pour 1/4 cup batter onto griddle for each pancake. Cook until bubbles start to form. Flip once.
When cooked through, remove and serve immediately with ghee, real maple syrup, and a sprinkle (or two) of sweet spice
makes about 6 pancakes
